Grilled Watermelon and Peach Salad with Arugula And Feta

Grilling doesn’t have to be reserved for just chicken or burgers. You can grill many different foods, including fruit!  We are stepping outside the box in this recipe and grilling the sweet stuff!

This salad combines the sweetness of fresh fruit hot off the grill, peppery arugula, and crunchy Bourbon Smoked Pecans. Follow our step-by-step recipe and you will have a crave-worthy summer favorite.

 

Grilled Watermelon and Peach Salad with Arugula and Feta

Perfectly balanced blend of peppery arugula, feta, and delicious grilled fruit

For the salad:

  • 3 LG peaches (halved and de-stoned)
  • 2.5 Lbs watermelon (cut into large 1” thick slices)
  • 5 oz arugula (Washed and dried)
  • 1/3 cup feta cheese crumbles
  • 1/4 cup extra virgin olive oil (for brushing)
  • Bourbon Smoked Sugar (for sprinkling)
  • Bourbon Smoked Pepper (for seasoning)
  • Bourbon Barrel Spiced Pecans (chopped)

For the dressing:

  • 1/4 cup balsamic vinegar
  • juice of half a lime
  • 1/4 tsp Bourbon Smoked Salt
  • 1/8 tsp Bourbon Smoked Pepper
  • 1/4 cup extra virgin olive oil
  1. Heat a grill or grill pan over high heat.

  2.  In a small bowl, combine the balsamic vinegar, lime juice, smoked salt and pepper. Start whisking.

  3. While whisking, slowly pour in the olive oil. Set aside.

  4. Cut off rind from watermelon and slice into large cubes. Slice peaches into small slices or large dice

  5. Brush fruit with olive oil and lightly sprinkle with smoked sugar and a pinch of smoked salt.

  6. Place peaches cut side down on the grill, as well as the watermelon slices.

  7. Grill for 30 seconds to 1 minute or just until grill marks appear.

  8. Remove to a cutting board.

  9. Place arugula into a large salad bowl.

  10. Arrange watermelon and peaches on top and season salad lightly with smoked salt and pepper. Scatter over the feta cheese and spiced pecans.

  11. Drizzle over the balsamic vinaigrette. Serve immediately.

Shopping list:
