Ingredients
1 yellow squash
1 zucchini
2 tomatoes
3/4 c olives
1/2 c fresh parsley
2 TBS olive oil
1 TBS fresh lemon zest
Bourbon Smoked Salt and Pepper
1 lb salmon
Foil
Bourbon Barrel Stave Grill Wood
Soak grilling wood for 30 minutes. Wrap the grilling wood in foil, and poke holes in the foil.
Cut vegetables in thin slices. Make a pouch out of foil, and place the vegetables in the foil. Season the salmon with lemon zest, olive oil, and Bourbon Smoked Salt and Pepper. Place the salmon on top of the vegetables. Fold the ends of the foil tightly.
Place the wrapped grilling wood over a burner, and heat the grill to medium.
Cover and cook for 12-15 minutes. When opening the foil, cut a slice into the pouch before peeling back the foil ends. Enjoy!
