Pork Fillets with Pan Roasted Garden Tomatoes

Serves 4 The Stuff 1 pork tenderloin cut into 1 ½ in filets 1 to 2 Tablespoons of cooking oil Bourbon Smoked Sea Salt and Pepper Bourbon Barrel Aged Worcestershire Sauce 1 pint cherry tomatoes halved (variegated colors really present well and the fresher the better!) Fresh oregano and parsley The How Heat (medium to medium high heat) your skillet and add cooking oil (when it slides around the pan easily and just barely starts to smoke it’s ready) Season the Pork Fillets and sear in pan but don’t over fill the skillet. 3 to 4 minutes on each side for medium Remove fillets and let rest Add tomatoes to same skillet and let them break down slightly. Let the tomatoes maintain some of their texture Add a few dashes of Bourbon Barrel Aged Worcestershire The water from the tomatoes and the Worcestershire will be your sauce Garnish with fresh herbs Pork Fillets with Pan Roasted Garden Tomatoes
