Black Eyed Pea Salad

INGREDIENTS Serves 5_MG_6039 2 cans black-eyed peas ½ cup red bell pepper diced ½ cup green bell pepper diced 1 tsp. diced jalapeno ⅛ chopped red onion 1 fresh lime 1 Tbsp. roughly chopped cilantro 1 tsp. Bourbon Barrel Smoked Paprika ½ tsp. Bourbon Barrel Smoked Sea Salt ½ tsp. Bourbon Barrel Smoked Pepper Canola Oil INSTRUCTIONS In a medium sauté pan, heat enough oil to cover the bottom of the pan. Add in the peppers, onion, and jalapeno. Sauté until onions are translucent and peppers are soft, add in all the spices. Stir in until mixed well. Once cooked, add in the black-eyed peas and a squeeze of lime juice. Cook just enough to mix everything together. In a bowl toss in the fresh chopped cilantro and mix. Serve either warm or cold.
