Ingredients
1 oz unsweetened chocolate
1/4 c unsweetened coco powder
1 1/2 c skim milk
2 eggs
3/4 c Bourbon Smoked Sugar
1 TBS Bourbon Madagascar Vanilla Extract
1 c heavy whipping cream
2/3 c Blackberry jam
1 c fresh blackberries, mashed
16 oz chocolate chunks
In a double boiler, melt the unsweetened chocolate. Do not let the water boil. Stir in coco powder. This mixture will clump, but the milk will smooth it out. Whisk in milk. When the mixture is combined, set it aside and turn off the stove top. In a large bowl, whisk eggs until they are fluffy. Add in sugar and mix for 2-3 minutes. Stir in cream and vanilla to the egg mixture. Slowly stir in the chocolate to the egg mixture. Let the mixture refrigerator for 4 hours- 24 hours. Put this mixture into an ice cream maker with the fresh blackberries. When the ice cream is finished, fold in jam and chocolate chunks. Freeze for several hours if you prefer firmer ice cream. Enjoy!
