Ingredients
2 TBS extra virgin olive oil
1/2 large red onion, diced
3 celery stalks, diced
1 roma tomato
2 cloves garlic, minced
2 TBS Bourbon Smoked Paprika
1/2 TBS cumin
1 1/2 TBS curry
crushed red peppers to taste
2 bay leaves
12 oz can diced tomatoes
1 1/2 c red lentils
5 c chicken stock
1 1/2 (add more if needed) c water
14 oz black beans, drained
parsley
Bourbon Smoked Salt and Pepper to taste
Over medium- medium/high heat, saute onions, celery, and tomato for about three minutes. Add garlic, Bourbon Smoked Paprika, cumin, curry, and crushed red peppers. Stir for less than a minute. Add all other ingredients except for the parsley. Stir occasionally and let simmer for thirty minutes over low heat. If the soup is too thick, add more chicken stock or water as needed. Garnish with parsley.
