Cucumber and Mint G & T's

Makes 4 cocktails 1-2 (13 oz.) cucumbers, washed 2 Persian cucumbers, washed For each cocktail: 1 oz. cucumber juice ½ oz Woodford Reserve® Mint Julep Syrup 1 ½ oz. gin (Hendrick’s preferably) Tonic water Mint sprigs, for garnish Ice   Method
  1. Grate the large cucumbers in to a sieve set into a bowl. Press down with the back of a spoon to extract as much of the cucumber juice as possible. You should have ½ cup. Set aside.
  2. Using a vegetable peeler, mandolin or knife, peel or cut 12 long, thin strips of cucumber around the inside of four cocktail glasses.
  3. For each cocktail glass, pour in the cucumber juice, Woodford Reserve® Mint Julep Syrup and gin. Stir. Fill glass with ice and top with tonic water. Garnish with sprig of mint.
