Ingredients
1 cup butter
1 cup Mint Julep Sugar
1 1/2 teaspoon Bourbon Madagascar Vanilla Extract
1 1/2 teaspoons mint extract
4 eggs
2 2/3 cups flour plus 2 tbsp flour
3 teaspoons baking powder
1 teaspoon Bourbon Smoked Salt
1 cup milk
1/2 cup Bourbon
1/2 cup creme de menthe
Icing
2 sticks of butter at room temperature
3 cups powdered sugar
2 1 1/2 teaspoons mint extract
1 tsp Bourbon Vanilla Extract
1 TBS of milk if needed
Mint Julep Sugar
Preheat your oven to 350. Mix together flour, baking powder, and salt. Set aside. In another mixing bowl, blend butter and sugar until the butter is fluffy. Add the eggs one at a time and stir in between each time you add an egg. Add the extracts and half of the flour mixture. Add the milk, cream de menthe, and bourbon. Add the rest of the flour. Mix as little as possible, just until the batter comes together.
For the icing, mix the butter on high with an electric mixer until it is light and fluffy. Add a cup of powdered sugar, and mix in between each addition. When all of the sugar is combined, add your Bourbon Vanilla Extract and mint extract. If the icing is too thick, add a TBS of milk. Put the icing in a plastic sandwich bad, and cut a whole in the corner of the bag. Pipe icing onto each cupcake and sprinkle with Mint Julep Sugar.
