Prosciutto-Wrapped Melon with Bourbon Balsamic Sauce

  1 large melon 15 pieces of prosciutto 2/3 cup balsamic vinegar 1/4 cup Bourbon Smoked Sugar 1/2 teaspoon Bourbon Smoked Salt 1/2 cup water Whisk together the ingredients in a saucepan over medium heat. Gently simmer the sauce for 20-25 minutes, until it thickens and reduces down 1/4 cup or so. Take it off the heat and let cool. Slice melon into 1-inch thick slices, and then cut the slices into thirds or fourths. Wrap a piece or half of a piece of prosciutto around each piece of melon. Arrange the melon and prosciutto wraps on a plate and drizzle each piece with 1/2-1 tsp of the Bourbon Sugar Balsamic Sauce. This Bourbon Sugar Balsamic Sauce is also great over strawberries, caprese salad, and other appetizers. Enjoy!
