This Sheet-Pan Salmon & Veggies recipe, straight from our founder Matt Jamie’s Studio Kitchen in Louisville, Kentucky, is proof that a few high-quality ingredients and one good spice blend can transform an everyday dinner into something memorable.

The star of this recipe is our Bourbon Smoked Spice. Recipe: Sheet-Pan Salmon & Veggies

Serves: 2–4
Prep Time: 10 minutes
Cook Time: 20 minutes

Ingredients

  • 1 ½–2 lbs salmon fillet (or individual portions)
  • 1 lb mixed vegetables (like baby potatoes, asparagus, cherry tomatoes, or Brussels sprouts)
  • 2 Tbsp olive oil
  • 1–2 tsp Bourbon Smoked Garlic Salt (or any Bourbon Smoked Spice Blend)
  • Freshly ground pepper (optional)
  • Lemon wedges, for serving
  • Fresh herbs, for garnish

Method:

  1. Preheat oven to 425°F (220°C).
  2. Toss vegetables with 1 Tbsp olive oil and ½ tsp of your chosen Bourbon Smoked Spice Blend. Spread on a rimmed sheet pan.
  3. Roast for 10 minutes, just until the vegetables start to soften.
  4. Brush salmon with remaining olive oil and season generously with your chosen Bourbon Smoked Spice Blend
  5. Add salmon to the pan and roast another 10–12 minutes, until cooked through.
  6. Finish with a squeeze of lemon and sprinkle of herbs. Serve warm, straight from the pan.
