Smoky Lobster Macaroni

  Lobster Macaroni Ingredients 2 Lobster tails-- cooked and cut into cubes 6 TBS butter 1/4 cup flour 3 cups of milk 1 cup of buttermilk 4 cups of sharp cheddar 6-8 oz goat cheese 1 cup gruyere 4 TBS chicken broth 2-3 green onions- chopped in 1 inch sections 2 cloves or garlic 2 TBS of Bourbon Smoked Paprika + more for garnish 3 TBS Bourbon Smoked Pepper 2 TBS Bourbon Smoked Salt Boil pasta until it is half done (about 3 minutes). Drain and set aside. In a large sauce pan, melt butter and whisk in flour. Continually mix until the flour is dissolved. Add in milk and buttermilk. Continually whisk milk over medium-high heat until the sauce thickens (about 10-12 minutes). Preheat oven to 375 Cut cheese into small cubes, and add all of cheese, but save 1 cup of the sharp cheddar for garnish. Add in lobster, spices, garlic, green onions, and chicken broth. Stir while the mixture is simmering. Add in pasta and stir for 1-2 minutes until everything is combined and nothing is sticking to the bottom of the pot. Distribute macaroni into two pie pans or one large sheet cake pan. Bake at 375 for 30 minutes. Garnish with Bourbon Smoked Paprika, sharp cheddar, and fresh thyme.
