Bourbon Barrel Foods' core philosophy is "slow, small, simple." With its flagship product, Bluegrass Soy Sauce, Bourbon Barrel Foods fulfills this artisan philosophy. From beginning to end, a barrel of soy sauce --roughly 600 bottles-- takes one year to make, and preparing beans to ferment in repurposed bourbon barrels takes two to three days. For the first six weeks of fermentation, the soy mixture must be mixed everyday. Interns, Ellen and Taylor, gained a new appreciation for the soy sauce production process when they made their barrel of soy sauce.
