Makes 60 Wings Bourbon Barrel Wing Sauce 12 oz Bourbon Barel Barbeque Sauce 3 oz Chef Edward Lee's Sambal Sauce 4 oz Bluegrass Soy Sauce 2 oz Bourbon Barrel Aged Worcestershire 2 oz spicy Kentuckyaki Whisk together ingredients and set aside Wing Seasoning 4 tablespoons Bourbon Smoked Garlic Salt 4 tablespoons Bourbon Smoked Paprika 4 tablespoons Bourbon Smoked Black Pepper 2 tablespoons flour 4 tablespoons baking powder Rinse wings under cold water and pat dry. Toss winds with dry seasoning, flour, and baking soda and lay on a rack sitting on a sheet tray. Bake in a preheated 250-degree oven for about 30 minutes to render the fat. Turn oven up to 425 degrees and continue baking for 40-45 minutes. Toss with Bourbon Barrel Wind Sauce Drizzle with sauce.
