If you’re looking to Eat Your Bourbon, there is no better place to start than our home base in Louisville, Kentucky. Situated in the heart of Butchertown, the Bourbon Barrel Foods tour offers a close look at how we craft the world’s original soy sauce aged in repurposed bourbon barrels.
Bluegrass Soy Sauce is brewed naturally brewed using local non-GMO soybeans, soft red winter wheat, and that famous limestone-filtered spring water. It's aged for a year making it premium quality, then pressed and aged in bourbon barrels.
The Tasting Mat: Your Guide to Umami
The highlight of any visit is sitting down with our Tasting Menu, where we explore the "5th flavor" known as Umami—which literally translates from Japanese as "deliciousness". Here’s a breakdown of what you'll experience on your tasting mat:
Bluegrass Soy Sauce: Our flagship sauce. It’s meaty, briny, and leathery with a subtly oaky sweetness. We recommend using it on sushi, sashimi, or in your favorite dressings.
Imperial | Double Fermented Soy Sauce: For those who want something richer and more full-bodied. Expect notes of molasses, earthy chocolate, coffee, and a bit of "funk". It’s incredible in broth or as a dipping sauce.
Bourbon Smoked Soy Sauce: We take our soy sauce and smoke it over bourbon barrel staves for an intensely flavorful finish. You’ll pick up notes of beef jerky, tobacco, and smoked oak.
Small Batch Bourbon Ponzu: A citrus-bright, tangy sauce made with a Bluegrass Soy Sauce base. It’s tart and biting, perfect for marinating fish or dipping dumplings.

We don't fake the smoke flavor.
We slow smoke our spices with bourbon barrel staves.
Bourbon Smoked Sea Salt: Solar-evaporated and harvested from the Pacific Northwest, this salt is briny, aromatic, and carries that signature smoked oak finish. It belongs on everything from meats to chocolate desserts.
Bourbon Smoked Paprika: Grown in New Mexico, this is sweet, piquant, and mellow. Try it in your next batch of stew or deviled eggs.
Bourbon Smoked Pepper: We prefer the cracked peppercorns—mostly because the whole ones kept rolling off the tray! It’s robust and roasted, adding a bold kick to veggies and meats.
Bourbon Smoked Sugar: This is a "put it on everything" favorite. With rich caramel and bourbon notes, it’s a game-changer for your morning coffee or your weekend barbecue.
