Extra fruity, extra virgin olive oil
20 dates, pitted
1 cup greek yogurt, full fat preferably
Zest of 1 lemon
1. In a small frying pan, heat ¼” of olive oil over medium heat. Saute’ dates in hot oil for 30 seconds, turning, until warmed through and softened. Do not overcook, as the dates can burn easily.
2. Spoon and spread the yogurt on a serving plate. Lay the dates on top of the yogurt. Drizzle a little fresh olive oil over everything and garnish with lots of lemon zest and some bourbon smoked salt.
